Subzero Nitrogen Ice Cream debuted Thursday night with a small vendor space in the Worcester Public Market. Lines formed around the booth. Patrons pulled out cell phones to grab video and pictures of the liquid nitrogen instantly freezing the cream in stainless steel bowls.
Owners Rita and Mark McCabe hope the same enthusiasm travels with them to a location on Front Street in Worcester, where they plan to open a shop by the beginning of April.
The McCabes entered the nitro ice cream industry more than five years ago in Nashua, New Hampshire. Mark McCabe said they wanted to expand to Worcester. The public market offered an opportunity, but a larger space at 44 Front Street will act as a second home for them in New England’s second largest city.
Subzero Nitrogen Ice Cream offers nine varieties of creams, which include vegan and keto options.
Beyond the cream, flavoring and toppings can be mixed into the liquid. Then it’s blasted at -321 degree with liquid nitrogen, filling the bowl of cream with a fog. When it dissipates a thick, creamy ice cream treat awaits.
Subzero Nitrogen Ice Cream handed out spoonfuls of free samples during the Worcester Public Market’s grand opening. One guest said, “Oh I’ll be back.”

Mark McCabe said nitro ice cream is normally heavier and thicker than normal ice cream since air isn’t injected into it. McCabe said if the frozen treat melts, it can be put back into the freezer and return to its consistency since it’s purely frozen cream.
Subzero Nitrogen Ice Cream is one of two frozen desserts offered within the Worcester Public Market. Froze Zone also offers daily made gelato. When Subzero Nitrogen Ice Cream opens across from city hall, it will be the only ice cream shop in the area of the common.
